Cornelia Diaz Roybal, 91 of Parowan, Utah passed away peacefully on December 28, 2010. She was born on December 6, 1919 in Garfield, New Mexico to Jose and Josefina Bouvet Diaz. She married Fred Roybal in 1943 in Garfield, New Mexico. From this union came four children. Many years later, she and Fred moved to Riverside, California where they spent a lot of happy years. After Fred passed away in 1992, Cornelia lived in an Assisted Living Facility in Riverside, but her health took a turn for the worst. After surgery to her brain she moved to Parowan, Utah where she was lovingly cared for by the Iron County Nursing Home for eight years. While in the Nursing Home she endeared herself to many of the people that work there and also to members of the community who would regularly visit. She made a lot of friends, but could also get pretty feisty if anyone crossed her.Because of her upbringing on a farm and her Grandfathers introduction of fruits and vegetables which were not considered the norm for Southern New Mexico, Cornelia developed quite a skill for cooking. Her daughters have been searching for many of her recipes. Mom also had quite a green thumb and would successfully dig up plants and transplant them only because she wanted them in another spot, and they would take. She was especially proud of the fact that her maternal grandfather, Martin Bouvet, was French. She claimed to be French but spoke Spanish to everyone. She had an unspoken sense of class and loved to powder her face and put lipstick on before going to dinner.Cornelia loved her four children - LaVerne (Ed) Apodace, Houston, TX., Fred (Luz Maria Medina) Roybal II, Riverside, CA., Rossina (Luck) Felstead, Parowan, UT., Gilbert (Jenny) Roybal, Bullhead City, AZ., 15 grandchildren and 18 great grandchildren. The family would like to pay special recognition to the Iron County Nursing Home whose unconditional love and dedication for the residents help them to keep their dignity at a difficult time in their life.Funeral services will include a viewing at Southern Utah Mortuary in Cedar City at 6:00 pm on January 7, 2011 followed by recitation of the Rosary. On Saturday, January 8, 2011 at 10:00 am a Memorial Mass will be held at Christ the King Catholic Church, 690 South Cove Drive, Cedar City, UT., under the direction of Southern Utah Mortuary. Online condolences can be made at www.sumortuary.com.The family would ask that in lieu of flowers that donations be made to St. Judes Childrens Hospital in Cornelia Roybals name by contacting
